What’s for dinner tonite!


Our cafeteria, at work has been upping their game, lately. This salad was delicious. Steak, spinach, feta, candied cashews, blueberries, strawberries and balsamic vinegarette. I let them keep the tomatoes and onions.

Chester's Fried Chicken, potato salad with egg, French bread with sliced Roma tomatoes with lemon-drop Martini's.

Because business had dropped off and customer satisfaction was down. With anywhere from 13,000 - 16,000 or more potential customers each weekday, this is a pretty good account to have. They serve breakfast, lunch and night shift lunch. There are at least 10 different food stations for daytime lunch - Italian pasta and pizza, regular American entree, German entree or sausages, a specialty salad like what I had today, grill with burgers and chicken sandwiches, salad bar (they serve), soup and sandwich bar, deli sandwiches made to order, Mexican entree (currently testing Peruvian food), Asian entree and a "healthy choice" section. Plus vending areas with snacks and refrigerated/frozen foods. Yeah. I'm pretty sure our cafeteria contract is fought over by local companies when the contract is due for renewal.

Oh, yeah. There is also a Starbucks franchise with their normal drinks and pastries.
 
This was Saturday morning breakfast at our campout. I call it breakfast mess. Eggs, cheese, sausage, potatoes and onion. Either I need to fine tune cooking quantities or I need a bigger skillet. No complaints from the diners.

I would say quantities. One doesn't want to interrupt to the coffee production on the right.

Too fancy of a salad for me…

I recently had about the perfect steak salad in my opinion and tailored for my tastes. Unfortunately it’s also about ruined me on steak salads, lol. I was doing some work for my friend Lisa’s work and requested a steak salad. I asked if she could grill onions and mushrooms for on it and she started to say “WTF, this isn’t Burger King, Sir…” and about halfway through saying that she trailed off and went, wait… that actually sounds really good… I suppose you want Cajun seasoning on the steak? Maybe some Dusty Trail seasoning too?. So yeah, Dusty and Cajun on the steak, grilled onions and mushrooms with garlic on top of a salad mix with fresh cut fries and cheese and just so super yummy… I‘m spoiled now, lol.

But stand by, because in 4 days I’ll be trying my hand at cooking some baby-back ribs on the grill…
 
Breakfast for dinner... my wife likes those lil smokies. I'm not a big fan...

Yes sir, 2 fried eggs over the smashed and salsa seasoned avacado toast, with cherry tomatoes and hash browns.
 
Italian sausage with peppers and onion. Sweet corn was surprisingly pretty good too.
