Why do roller coasters always hit the brakes

Anyone else annoyed how many roller coaster kill a ton of speed in the middle of the ride? What’s with that? Certainly that extra speed could be used for more fun.
 
I think insurance companies kill all the fun, by limiting ride operators from killing a few riders every now and then

Never think you will get a thrill from any ride that has a fixed address

Traveling carnival rides is where the thrills are, limited safety inspections, ride operators name Buba or one ear Mike, and most important they leave town, at night, no fixed address
 
Sometimes I daydream of being a surly carny with a mullet.
