They do? I am 6'2" 170 pounds. I have two regular cab trucks. I have no problem with either.

I’m fairly comfortable in my regular cab F-150 and F-350.

I’m not particularly comfortable in a regular cab Ranger. I fit, but the length of my legs is just enough that an extended cab is much more comfortable. That extra couple clicks on the seat tracks makes a difference.

For years I've been piecing together (in my mind) what it would take to make an all wheel drive, 1st gen V8 Ranger sport truck and it's a looooong list. IF you want it to have any sort of low stance.

The best and easiest (also lightest) combo would likely be Exploder front drivetrain parts but using the 2.3 turbo engine. Though an Exploder front frame clip along with the V8 might not be so bad to fit up.

There's some great Youtube videos of Tony Angelo building a poor man's Syclone using an old beater S10 and that truck was just as fast as the original.

If I had a concrete floor garage I would have already been in the process of building one.

I'm guessing you're in the 6'7-8" range... Everyone is 4feet tall then.
