Cashew stir fry at my favorite Thai restaurant.

Finding myself sick for the second time this winter, I wanted something comforting for dinner - soup. Uh-oh. None in the pantry. So, I'm at the local vietnamese Pho restaurant. I thought I remembered having a fork the first time I came here. Tonight, spoons but no fork. Well, if Asian people can eat soup with a pair of sticks, so can I. Those noodles don't behave properly on a spoon.

Today is my last shift at my current Station assignment and it's my day to cook.

We did blueberry protein pancakes, over easy eggs, fresh sausage (from my LT's farm) and cantaloupe for breakfast.

Not doing a fancy dinner, but it will be good!

I'm doing a "baked potato bar"

My LT made chili two shifts ago, so I'm re heating that, mini broccoli florets, two kinds of cheese (shredded and cheese sauce) bacon, chopped scallions, sour cream, etc

I picked up big honkin' Russet Potatoes.
Gonna rub 'em down with olive oil, sea salt and cracked black pepper and bake 'em so the skin gets nice and crunchy.

And a big 'ol salad.
