I dressed the turkey that will be smoked in the morning for Christmas din-din at my daughter's home:
• brined rosemary/garlic 48 hours
• spatchcocked/trimmed, + breast bone removed
• dry brining 24 hrs
• will be injected w Creole Butter
• Japanese mayo binder
• Chicken Dust, smoked Paprika, black pepper
• smoked @ 275°F with applewood pellets sprinkled with dried onion flakes over ⅜" slabs of sliced Walla Walka sweet onions until 165°F internal breast temperature
