What’s for dinner tonite!


It kinda looks like I'd be buying bigger pants if I was on my second plate.
 
Hold up. What is all that? Looks like walking taco, vegetable soup, mac+cheese, and something barbequed on a bun? Oh and BBQ sauce in a Cirkul bottle
Walking Taco
Kielbasa stew (kielbasa, potatoes, carrots, onions in what’s almost a sort of chicken gravy)
Mac+cheese
Pulled pork on a Kings Hawaiian roll

Water in the Cirkul bottle. Still trying to decide how much I like the Cirkul stuff.

I’ve been burning enough calories lately it should be just fine. Actually most of my belts I need to punch some more holes or something because I have them cinched in as tight as they go and I could use another notch. Dang it feels good to be moving a little more and back under 200#
 
Leftover slow cooked, seasoned pork spare ribs from Memorial Day, potato salad, fresh sliced pickles, corn on the cob and Monday Night Football...go Broncos 🍻🍻🍻 (I don't believe in desert).
 
Last night I made nachos with garden fresh peppers and tomatoes...

Tonight my wife made me a Naan bread pizza...

My wife loves these... I'd like them more if they weren't such a PITA to make. Had some time this morning to put them together. Just takes a little bake time and dinner will be ready. Will eat one pan tonight and have the other on Sunday.

I use to stuff the peppers with Zatarans Dirty Rice. Since I found Rileys Cajun seasoning... I make my own version of dirty rice. Ground turkey... long grain white rice... dehydrated onion... minced garlic and Rileys Cajun to taste. In the bottom of the baking dish... sliced onion... trimmings from the peppers... and a can of fire roasted tomatoes. Before I put them in the oven... pour a can of tomato sauce over the top... cover in foil... bake for about 30 minutes @400 degrees. Remove foil... add some cheese (today will be a slice of provolone on each pepper) and bake for another 10 minutes.

Serve it with a big spoonful of the tomato gravy from the bottom of the baking dish over the top.
