Was really hot and humid today. So some Thai green curry with scallops sounded good. Scallops in the marinade.

I can't remember the last time I had lime jello salad. As a kid I loved it. Gotta say... it's still really good.

I'm gonna make a point to make a couple different ones this summer.

Last night’s dinner. Steak, bacon, cheddar burger from a local butcher shop with grilled onions, mushrooms, Swiss cheese and well, more bacon. Fries and salad on the side. Frosty one because it was hot out.

2 of my camp dinners from this week. Nothing fancy. But, boy did it taste good.

Burger with provolone and corn on the cob. I had stopped at a roadside farms stand to get the corn (3 ears). Second night was another burger (the other 1/2 lb of beef). With baked beans instead of the corn. I had intended to have potatoes, too. But wasn't that hungry. Plus, the rain kept my cooking time to a minimum.

I call them mountain pies. They go by many names, like pudgy pies. Basically a "hot pocket" cooked in the campfire. Tonight, I filled them with shaved ham, provolone and colby-jack cheese. One of my all-time favorites. Simple with few dishes to wash. I made 4 of these babies but only ate 2.

I was lazy and opted for something easy. It ended up being corn tortillas with melted sharp cheddar, black beans, and sour cream.

Tried a new chicken restaurant tonight. Not too bad. I'll probably go back.
