I did not do the egg rolls. They are frozen. That’s for my wife. She doesn’t think it’s Chinese food without egg rolls. I’m sure I’ll learn how to make them at some point.

tomorrow night will be beef Wellington.

Egg rolls probably aren't hard to make. I used to make fresh spring rolls quite regularly. I need to do those again. Dipped in a Thai peanut sauce, they are to die for.

Tonite was beef Wellington and smashed potatoes.

I’ll admit. I slightly overcooked the filet. But it still was juicy and tender enough to cut with a plastic knife.
