What’s for dinner tonite!


Made my dad's beer potatoes/carrots. They came out about perfect. Punch a fork through the foil and the beer steams out... but the sugars caramelize and burn just a bit. Makes a bit of a sweet glaze...

Bought one nice New York Strip that the wife and I share now days. And some fresh mushrooms.

I sure missed the grilling...

My dad always drank Busch... so that's what I typically use. But I'd guess any beer would do.

Yes... perfect campfire foil packet of goodness. Tonight I put them right on the coals to get them going.
 
Before throwing away the used peanut oil from those deviled eggs I did the other day, I decided to try Kent Rollins' home-made corn dog recipe. Yum-yum again!

I had completely forgotten Kent as part of my inventory of great recipes, thanks again for reminding me. here's a couple oddball ones that I also picked up in recent (last 10) years: Tasting History with Max Miller - youtuber, and Townsends - again youtuber, found him looking for a great traditional fried chicken, his recipe from revolutionary times was the hit)

I've seen a few videos by Tasting History. They're interesting.
 
yeah I wont say that I had any interest at all in making Kriegsmarine "hard tack", but I have tried one or two of his others...
I don't remember where I saw it, (probably history guy or townsend), but I am interested in trying boston canned brown bread
 
Smoked chicken & pico de guio tacos-

Boneless, skinless chicken thighs marinaded in brown sugar, soy & teriyaki sauce, with a tiny bit of oyster sauce. Soak for 1 to 2 hours. Smoke those thighs good. Serve with fresh made (Pico De Guio) chopped jalapenos/onion/tomatoes & couple T spoons of spicy vinegar. Had them last night, may have them again tonight, if so I'll include pictures.
 
Got to have some peanut sauce with those rolls, oh man I can taste em.
 
Cleaning the fridge again. I had a bunch of roti that was dry and wasn’t coming apart from the pile without ripping. I had some raw hamburger needing cooking soon. I had just pick up some spices to make homemade taco seasoning. So I made a Mexican lasagna…
I layered the roti with seasoned hamburger and cheese. Something like 5 layers and cooked it covered with tinfoil @ 325°F for 40 minutes. Uncovered and under the broiler for a minute to get it brown on top. Quite tasty!
