Weber carb question...

Ok I have an '83. 2.3L Carb form the factory 2WD, the higher gear ratio, don't remember the x.xx. This is what I've done so far... Lower end rebuild. Bearings, bushings, rings .60 over pistons*not forged ,then head rebuild, added a hotter cam.

Im looking HERE for a carb, I want better than stock... So either the E3351 or the E3341 or E3335. What I'm wondering is will the circle track carb or the off road carb be too much? I don't wanna over fuel it and lose all of my lower end RPMs, but I'm hoping for better performance and HP. I should go FI, but I like carbs and I don't wanna mess with Fuel Injection. Or how about the Holly E3337. It doesn't have a header YET, but I'm planning on one. Which one would you rec'd. I'm not sure what "Circle Track" or "Off-Road" are supposed to be referring to, so thus this question...

x2 on that. webers are badass carbs without a doubt, but they can be very finicky. a holley 2300 would be a sure-fire setup that would be totally tunable and they're available in many different sizes to suit pretty much any 2.3 build.
