My 87 ext-cab truck is got some sag in it.
I was thinking of installing some leveling coils, if I do that is it still safe to remove the anti-roll bar?
I still want it to be safe for street and freeway use

I say keep your anti-roll bar. It's not a matter of safety though. It's a matter of keeping your truck from feeling like it's going to roll onto its lid in the corners.

the leveling coils are stiffer than the stock springs, they are going to make the truck more stable. if you want to take off the sway bar because you want better offroad performance, do it, you'll be fine. if you drive mostly on the street you'll like the extra stability of leaving it on

I disconected my sway bars and it is fine It "feels" like it "might" roll but it wont. You will have a ton more flex too!

I was looking for some extra flex, but did not want to hurt my street use, would I be better off with something else in a ex cab?

I have a 91 ext cab. I would and prob will go with just coil spacers washers and or 2 in lift coils.

I have to disagree....skyjacker coils have less spring rate than factory coils. When I installed my skyjacker 2" coils many years ago, I actually thought it road alot better than factory coils. Rough Country and superlift and some others are from the stiffer coils.

As far as the sway bar, disconnect it and ride around a few days and see what you think. Its not that bad, just slow down for turns. The truck will ride better with each wheel having unrestricted articulation to soak up bumps.

would a dual shocks setup help with the body roll at all?

Yes, especially if you have higher end shocks...
