"Setting" a Self-adjusting Clutch

Seems unnecessarily complicated. Isn't the purpose of the self adjusting just to maintain pedal height as the clutch wears?
That's exactly what it does... Except that we have hydraulic-operated clutch systems (not cable-operated systems), which by their very nature are already self-adjusting...
What does a "self-adjusting" clutch do exactly in this application and why are they even available? (obviously I must be missing something :icon_confused: )
