Scrapple and Hominy

Hmm, I had wild hog and yellow rice last night.... I too have never heard of scrapple, I eat hominy a lot though...

I had never heard of Scrapple until a friend of mine from Maryland told me about it. It has the consistency of spam, but it's grey, and it's made of the brains, eyes, hooves, guts, etc. All the parts they won't use for hot dogs or sausage.

I guess the traditional way to eat it is to slice it and eat it on toast, or to mix it with eggs, but he said to try it with hominy, and it's the best thing ever. Looks like either puke or dog food, but it smells and tastes like pureed heaven.

Pan fried slices sometimes with maple syrup applied.

there ya go, stick to the heart goodness in every bite. also good with grits is cooked up breakfast sausage mixed in with longhorn cheddar cheese. now that will warm you up and stick wherever it goes all day plus some!
