Aside from the specs, i.e backlash, pinion bearing preload, etc. it shouldn't be any different than setting up an 8.8. If you look in the tech library, there are some good 8.8 guides.

I looked it up and the 7.5 and 8.8 have identical specs when it comes to gear setup.

Backlash: 11-16 (thousandths of an inch)
Pinion bearing preload: 14-19 ft. lbs.
Cap bolts: 60 ft. lbs.
Ring gear bolts: 60 ft. lbs.

Its actually

8-15 thou backlash
70-85 for both the cap and ring bolts
8-14 INCH-lbs pinion bearing preload for used bearings, 16-28 for new bearings

(this for both 7.5 & 8.8")

Some links in this post are about how to install gears ;)

Hmmm....I got my specs from DTS.

But I think those might be wrong. The numbers you listed seem familiar from when Todd and I set up my gears.
