Ok I plan on installing 35/12.50/15 on my Explorer and I was wondering how wide of a rim will I need to get in order to fit them nicely, without them bulging out?
 
This for offroad use (aired down)? If so, go with 15x8s. The narrower rim will help retain the bead better.

If the big tires are more for looks, 15x10s may give you slightly better handling.

Use a 3.75" backspace for the 15x8, 4.5" if you go with 15x10.
 
15x8 3.75" backspacing works just dandy!
 
Will those work for offroad and daily driver?

Of course.

I have 12.50 wide tires on 8" rims on both of my trucks. Only thing would be on a Ranger (very light in the back) you'd want to keep on top of tire rotations, as the rears tend to wear the centers more if you don't. This should be a non-issue on your Explorer (like on my BII).
