Blew up my 8.8 last night, my question is, will a carrier from a mark 7 with 3:27 gears bolt up to a 3:73 ring gear?

The 8.8" carrier doesn't have a ratio break, they work with all gear ratios.

You can use it no problem. The Mark VIIs came with open differentials and limited slip. The 3.27 LSC/Bill Blass models have a axle code of 5 for open differential, or E for limited slip.
check the door jamb sticker on the Mark VII you may get lucky and have a limited slip.
