low idle (cold) not smooth run temp

Problem: when cold engine I have to baby the throttle to keep her running. After running temp achieved idle is not smooth "jerky, almost like miss".
History truck set for 4 yrs in field prior to my purchasing her..after my purchase put new plugs, wires, cap, rotor, fuel filter, air filter, eng oil and filter. fast forward to this last dec put in new timing chain and gears set timing. oh also water pump and flushed cooling system. now for the last two or so weeks ever since i cleaned the IAC sensor/valve my baby is not running right. cold have to baby throttle, warm idles jerky.

Any ideas or thoughts would be wonderful, Thank You in advance

Check your coolant temp sensor its near the thermostat housing with two wires coming out of it maybe you bumped it when you did the timing belt or maybe it just died for no reason. Maybe you messed up the IAC somehow, did you put on a brand new gasket when you did the IAC, maybe you have yourself a vacuum leak.
 
new gasket with IAC. have ordered the coolant sensor will be in about 2 p.m. as far as replacing the IAC am trying not to until I have to. by chance does any one know if i can use an ohm meter to test and if so what readings am i looking for. regarding a vacuum leak have sprayed B-12 on all possibilities....brake booster, intake, injectors, factory air plenum and tube even the IAC all while running and no change.
