any one see anything wrong with using a grade 8 bolt in the center of my leaf spring instead of using the possibly supplied possibly not supplied center pin?

That's what I did. I ground the hex portion of the bolt head to fit the spring perch.

I would use a grade 5 so it will flex instead of just snap, but that's what mine has...

for centerpins on the shelf at advance auto! there 5" long so i'll just cut off what i don't need when i get them bolted in.
