On my 1991 Ford ranger xlt extended cab, I can’t figure out what size my rear differential is. Im trying to replace the cover and gasket. The door sticker says 8.8 but it looks awfully like a 7.5. I’m stumped. Any help would be appreciated. Thank yall

Judging by the photo I currently see in your post, I would call it a "Dana 0".
 
Judging by that cover, I'd say Gm 10 bolt. Unless somebody put the wrong cover on.
I was thinking 7.5" You could always take the cover to the parts store if you've got another vehicle to drive.

why would a gm10 be on a 91 ford ranger 4x4? This is my first truck sorry if I’m asking stupid questions

Me too but door panel says 8.8 and it seems to be the original axle, since it was painted that forest service green and I’m assuming the forest service bought them new and painted them. So if it was swapped with a 7.5 why would the differential cover be painted that green too?

It's a 34 year old truck. There's no telling what has been done to it. That one picture doesn't give us much info other than the shape of the cover. That could be an original 8.8" with a mismatched cover or it could be the 17th axle that has been installed in that truck. A few more pictures may help more experienced people narrow it down for you. Other views of the differential and the axle as a whole could be helpful.
 
An 8.8 has 3" axle tubes, a 7.5" has 2.8" tubes.. according to Google.

Break out the calipers.
