Coolant in the oil after... intake change???

Had the typical 4.0 eating oil, drinking coolant,and number 5 plug blackened at 130k.
Changed the intake manifold gasket. More power, better mpgs (22.5 with 5 spd), ands smoother running engine after. No more using oil or coolant.

Now at 156k, I dump the oil and I see cow snot. I have been monitoring the coolant level since, and every 400 miles, it uses about 10oz. I don't see any bubbles in the radiator fill when I run with the cap off, so I don't think it's a head gasket(?). It also doesn't steam or smell of coolant out the tailpipe.

Could I have messed up when doing something with the intake gasket, and should re-do it? If it isn't head or intake, what else could it be?

Most times in the winter the condensation in the engine is seen on the oil fill cap and it looks like snot..
After a 50 mile or so drive that snot evaporates and isn't there to be seen. However it may reoccur, this happens in the winter months.
I suspect the 10 oz you are missing is coming from a small exterior leak. Once found the coolant level should stay full.

No, when I dumped the oil, a LAYER of white film came out. Also over the last 1000 miles the reading on the dipstick has increased. This wasn't on the oil cap, which on my motor would be hard to get anything on, seeing as though the path to the valvetrain doesn't look like a straight shot through the fill tube. I'm talking 1 pint to 1 quart of water in the oil...easily.

Then we better be putting another intake gasket on there.. Or at least check the intalke bolts for snugness.. Might be one has backed out a bit.
Doesn't the oil change colors and general "look" when you cneck it with that coolant in it?

Yes it is a milky brown color, not the typical gold to black color of used oil. After 10 years of ownership of this particular truck, it was anything but what I'm used to.
