To get red blood in humans we put oxygen in the iron-based hemoglobin in our blood. We have pink to red skin, depending on how hard we are breathing (when the blood is oxygenated), and blue (the color of iron) when oxygen is taken away.

To produce the skin colors seen in smurfs their hemoglobin almost has to be cobalt based, as it turns a dark blue when it oxidizes. When you remove the oxygen it can turn silver or pink, depending on the variation.
