Can you crank leveling keys for more lift after you put them on? And should you be able to use the stock U-bolt if you use a 3 inch block instead of the stock 2 inch block?

Yes but the stock suspension in the stock mounting points only gives you so much additional downtravel. All you are really doing is adjusting the front suspension downward.
However much you "lift" it by turning the t-bars or keys is how much downtravel you lose.
So you aren't going to get a 4" lift for free. The Superlift kit gets 4" by lowering the differential and lower control arms and using dropped knuckles to lower and locate the halfshafts. This is why it also costs $1500.

For the rear blocks, I don't know that there's an inch of spare thread sticking out below the mounting pads. So probably not, you'll need longer bolts.
