My ac blows hard and cold most of the time. At random times its like the compressor just cuts out. The fan is still blowing but the air coming from the vents is not cold and humid, then a little while later the air is cold again. This happens more if I'm in stop and go traffic or just idling for a while, but still does it on the interstate at 80 mph.

It does cut the compressor with heavy throttle input.

Hows your fan clutch? I need to replace mine it blows out 75 deg air in town but 45 deg on the highway due to airflow.

Check the pressure with a gauge. As the engine speed increases it gets colder I assume? If so you are low on freon. One of Ford's not so better ideas was to use spring locks on the hose connections. As they get older they leak like crazy. If the head pressure is good I'd lay money on a clogged condenser. They are prone to that from the small passages. Anytime I look up A/C parts for customers now just about every time it recommends replacing the condenser now.

I had that issue it turned out to be a leak in the heater control valve. Mechanic offered to "bandage" it for $15 or replace it for $40. I had it replaced and my prob went away. I now get cold with the ac on full blast even if it is 110 degrees outside
