2000 Ranger 3.0 Litre V6 to V8

I'm looking to start a project V8. Currently have a 2000 Ranger, 5 speed, 3.0 Litre V6, and would like to rebuild a v8. What would be a good sized engine to use? I see the site reccommends a 302 but it looks like that's for the 4.6 and 5.0 litres. Still new to all the engine rebuilding but have a mechanical background and am doing this project to learn. Any ideas will help. Like some power and torque, understand I need to upgrade my tranny as well. Also wouldn't mind an older engine that I might be able to make new and shiny, something with a breather box on top of the block. Basically looking for something cool looking that can kick some ass too. Suggestions( for any part of the process)
