My ac from time to time will shut off during heavy acceleration and won't come on till she has sat for a while.

Now today after I got don't putting a thermostat in it I cranked it up and noticed the clutch engaged and then immediately diso engaged.

I checked the freon and it was high so I corrected the level and still nothing. The other day I charged it ( 1 pound) and the ambient temp was around 60. But I don't know what gives. Thanks in advance!!

Please elaborate on the methods used to check the level of refrigerant and to charge it.

I have a set of gauges with the red and blue lines and the yellow for the refrigerant. They aren't high end but they aren't the free ones u get with a can of 134 from Walmart lol

that brings up a possibility that I've had in the past.
car was a Taurus, AC would start and work until the engine was up to normal temp, then clutch disengaged. shut car off and cool down, same thing happened. then I found that if I drove above 80 mph the AC would start working again.

I rigged up some test leads so I could monitor the AC clutch coil while driving.
turns out the coil would go open as the engine warmed up, but would cool off and start working again as the 80 mph wind cooled the accessories and stuff.
this car had the AC down low in the front, it got lots of air at freeway speeds.
a new coil cured the problem.

another item to check is the clutch gap. when the plate wears the gap increases and it's harder to pull it in. there may be shims on the AC shaft that allow adjusting that gap.

most likely, the charge is screwed up.

Do you have the Ford factory service manual which details the method of testing the system for in/out time & the recharge volume?

That isn't the correct way to check the charge level. The pressures can tell you many things about the state of the AC system. The actual charge level is not one of them.

It was brought to my attention that the pressure was high because my compressor was not running, again ac is not my wheelhouse so to say.

My ac was functioning fine until I noticed the ac clutch would engage when the truck first started but would immediately disengage .

I'm assuming I may have a faulty switch or clutch. I guess it's time for a trip to the shop
