I blame @DeeRanger for tonight's menu. I usually make cornbread... but tomorrow is bake day for Christmas goodies... so it was a few crackers.

Home made fresh lemon/lime curd. About 2 cups total. Added a bit of vanilla and salt to the recipe and used coconut oil instead of butter.
Tastes good!

TONIGHT IS FOR TOMORROW
I dressed the turkey that will be smoked in the morning for Christmas din-din at my daughter's home:
• brined rosemary/garlic 48 hours
• spatchcocked/trimmed, + breast bone removed
• dry brining 24 hrs
• will be injected w Creole Butter
• Japanese mayo binder
• Chicken Dust, smoked Paprika, black pepper
• smoked @ 275°F with applewood pellets sprinkled with dried onion flakes over ⅜" slabs of sliced Walla Walka sweet onions until 165°F internal breast temperature

Smoking starts Christmas day at 10:30

Here is the tomorrow, bird finished, then carved.
