Well probably something with common parts like an Explorer or a s10 Blazer modded to have the smallest mechanical diesel you can easily get parts for. 1.6L from a Jetta or something more recent from a common stationary/tractor setup. Convert the lead acid battery to super capacitor and have a small solar panel on the roof. Fill the interior with gear including tons of fuel filters. Fill the tires with foam.

Strap a bicycle to the roof and then use that as primary transport after realizing cars are probably useless in the apocalypse
