The idea is to cut the earbuds off a pair of headphones and splice them into the speaker wire of the car (I have no radio and I don't want to replace it at this time because it will just get stolen again...). Would there be enough output to create legitimate sound?

really? not to be rude but that sounds like a horrible idea. You can buy cheap different guaged wires at walmart. Speaking from experience, get the right guaged wire, I have gotten really close to starting a fire. I am a firefighter, and there are a lot of car fires that start when people try installing something themselves and they do not use the right parts. There is a reason why there is building codes, For instance, in the 70s code was at aleast aluminum wiring, and this caused many fires. I mean its your truck, but I am just warning you.
 
if your not looking for any thing big you could put a amp under your seat and get a headphone jack to rca patch cord for a mp3 player
 
Or mount a cheap stereo in the glove. Or get a crappy 2 knobber that nobody would want to steal.
