What do you use to remove old gaskets?

I've always used brass tools like a putty knife. thats what we use at work in the molds because brass isn't strong enough to damage steel.

Those rubber 3m gasket removers like in that video work awesome. They do not remove metal, they are too soft.

You bet, we use the Scotchbrite, gasket removers, sanding discs and brillo pads at work.
