Yeah, I like mine with a 180. Wouldn't go back to a 195 for any amount of money.

My temperature gauge needle is always about one quarter inch over the lower mark on the gauge. Never strays from there even on the hottest Oklahoma days.
Still have the factory water pump as well. I've changed the coolant twice in the 16 years I've owned it, that probably helps.

Consider replacing the thermostat, bleed the cooling system for air pockets, check the radiator cap, verify the radiator fans' operation, inspect for coolant leaks, and ensure the radiator is not blocked. Keep in mind that the thermostat controls the minimum engine temp, the radiator, water pump and fan control the upper temp. I've run a variety of different thermostat temperatures in many vehicles over the years. The carbureted 351 in my Ranger likes a 195 better than a 180, my Mustang has a 180 but that's left over from when I was drag racing and probably isn't necessary anymore. No engine is efficient when it's cold and tollerances are loose.
Running thicker oil adds parasitic drag and slows oil circulation on cold starts. My 351 is full of Motorcraft 5w30.
Cold intake air helps as long as it's not too cold, like 55-70 degrees for example. In sub zero temps cold air causes the fuel to drop out of suspension in carbureted or throttle body injected engines and throttle body icing.
