If the garage is finished it will bring up the value of the home. You can get high abuse drywall to use on the lower 4 foot, you can also get quietrock. that crap is heavy and fire rated. If you are looking for fire rated rock make sure that you get type x or type c. You are right though about spraying, orange peel is easier to spray than knock down. If you want a decent finish though make sure you run a sanding pole over everything to knock down your lap marks before you spray.
