Manufacturer's parameters

What are the factory parameters fot the items that mt scanner will monitor live. MAF, short and long term fuel trim, TPS%, etc....

I can read all this data but can not find the specs to tell me if the readings are out of tolerance. Any help would be greatly appreciated.

Also has anyone hooked up a scanner that reads live data and had it cause the engine to run bad. It there a proper order to hooking one up and viewing this data?
