Lack of power on acceleration

Noticing recently that (intermittently) I will have low power/hesitation on acceleration. The pedal is pushed, but the truck takes some time to get moving… not sure if it’s a vacuum? Fuel issue? Hopefully not transmission slippage. Thoughts on where to begin?
Another thing that happens, (only 4x in a year of owning the truck) the truck will just die… when you come to a stop. (Auto trans, dies at stop lights.) every time has been within 2 hours of filling up at the gas station.
2000 Ford Ranger XLT auto, 4.0
 
Based on your gas fill-up reference it could be a plugged up canister or canister vent. But are there any codes?
 
Which engine? There were 3 in 2000 and could make some difference...
