So beds off, replacing rear gas tank crossmember, bed crossmembers, painting frame, replacing rusty spare tire hoist, u joints, shocks, and treating and painting frame.

I’m on the fence about replacing fuel pump. It has an “airtex” pump in it. I know I should replace it but I’m about 5k into the truck and another 300 is a lot right now for a motorcraft one

Anything else I’m missing?

well its more money- but I would por-15 the frame, check those rear shock mounts.
 
Check the other crossmembers, check the upper shock mounts and leaf spring hangers. Check the frame good for soft spots. It’s also a convenient time to run Ni-Copper or stainless brake line. Basically check over everything, the bed off is the best access to that area.

Personally, if the fuel pump is working fine, I’d leave it alone. I have a no-name pump in my green Ranger, Airtex in the Choptop, I forget what went into mom’s Explorer but I do know I had both a Delphi and a Carter that one was DOA and the other lasted a month.
 
The only real hard part about changing the fuel pump is dealing with rusty hardware... which you have pretty much delt with no matter how you change the pump down the road.

Never seize everything and let it ride IMO
