Which is a better width wheel for 31x10.5? 7 or 8 inch wide?

It depends, a 7" will make the tire a little taller and skinny but a 8" will widen it out. It would work either way. I run a 8" wheel with a 235 on it because I like the looks of a wider tire, and I can get tons of 235s for free so it was cheaper for me to just find a wider wheel than buy new tires all the time.

I like 7s with 10.50s.

I would go with 8s. That way if you ever decide to go bigger (33x12.50, etc.), you won't need new rims again.

I B ig-nernt 'bout tires... SO... do I understand you can mount tires as wide as 10.5" (nominal spec.) onto stock 7" rims?

I guess tire shops have no issue with this... but any RISKS, highway or off-road?? Backspace to suspension clearance?

15x7 is generally the narrowest rim recommended by manufacturers for a 31x10.50 tire. IMO, this is actually the best combo for offroad use, you get a better sidewall bulge that both better protects the rim's edge from impacts, and retains the bead better when running lower pressure.

A 32x11.50 will fit fine too, even though most mfgr's recommend the 8" rim for this size. I wouldn't go any wider than that though on a 7" rim.
