Is it possible to take a GT40 motor and put it in a 2005 Sporttrac without having to do a whole bunch of work to the engine compartment?

I think the easest swap would be the 4.6L out of a '05' Mustang or the Explorer. All the electronics got moved to the right front fender area and share common wiring. Not sure when for the Explorers but they are there in '06'.

Not sure without having both wiring diagrams. I've got the ones for the '06' Mustang and Explorers. Pop the hood and see if you have the computer and all the wiring up front passenger side. Ford made it easy for the '98-2001" swaps in that the Ranger and Explorer shared the same basic wirings and locations. Now it looks like the Explorer and the Mustang share the same basic wiring and componets.
