My ranger has recently started to vibrate when it reaches around 40mph, and will continue to vibrate until it goes below 20. I’ve heard it might be my U-joints, but is that a good assumption to make, or should I focus somewhere else?

There are so many possibilities that you really need to get it in the air check things. If you have a pair of jack stands it's pretty easy to turn one end a time by hand.

check tires for ice, the frozen type.

what about above 40? like 60? or is too bad to go that fast?
vibrations below 40 are not balance related, somethings bent or worn badly.

as stated, get the wheels off the ground and spin, feel for catches & out-of-round.

Can you feel it in the steering wheel? Get the front end up in the air so you to turn the steering wheel. This has to happen regardless if it's a u-joint problem. If a u-joint is seized, it will be harder to turn the steering wheel . But a tire could be delaminating, lug nuts could be loose, wheel bearings could be loose, suspension components about to break.
