What’s for dinner tonite!


Well, the ex told me she made Dinty Moore and Red Lobster Cheddar Bay biscuits, which sounds pretty good.

I had dinner with the family, we had venison tenderloin medallions with homemade creamed spinach and like a cheesy yellow rice.

After the news about my main waterline needing to be replaced... it was time for some comfort food. These are Kogels polish sausage in natural casings. Been years since Illinois store don't carry Kogels. I brought a few packs of hot dogs and stuff from my trip to Michigan. Then there is not much better in the way of comfort food then homemade Mac and cheese.

Pork in pork in pork. I'm making a Sierra Pork Roast for Saturday. I'll brine it on Thursday. I make this 2-3 times a year whenever all three cuts are on sale. Take a boneless pork loin roast, cut a slit on the top and season and insert a whole pork tenderloin, and cap the whole thing with a rack of baby back ribs. Tie it up, rub with olive oil, sea salt, coarse pepper, thyme, garlic, rosemary springs and and cook it low and slow indirect on the Weber. There's something for everyone. Serve with crispy, buttery smashed baby potatoes, and grilled asparagus.

My wife's birthday today...

I was going to do these strip steaks on the grill but it started raining.

I made a double batch of croutons... they go great with a bowl of French onion soup. I plan to make a pot of that tomorrow.
 
Mmmmmm… pierogies.
 
We ended up having chicken caesar again because it was so good... and we used up my extra croutons. So I made some cheddar bay biscuits with my French onion soup with some portobello mushrooms that needed to be used.

I've been miserable with the flu for the last three days. My wife is stepping up to the plate to handle dinner duty. Last night she had pizza delivered. Tonight...
