It’s high-society Cajun cookin stuff. You could do it. But you may not have the patience.
 
Cajun ANYTHING does not belong in chowdah. Chowdah is northeast food.

Gumbo on the other hand, cajun and delicious. But you weird southern people have no business in the chowdah game.

Ill fight a bitch for putting cajun seasoning in my chowdah.

You should see the teensy tiny lobstahs they eat down there.
 
Roux... butter and flour.

Melt butter... and flour... make a thin paste.... continue to cook for a couple minutes. Put it in the crock pot. It will thicken the chowder as it cooks in the pot.

We have crawfish here. I have a commercial license to trap them. They just aren't around as long. August and September are the only months to catch the big edible ones. We have several other species that aren't edible so you need to know what your catching. I do big crawfish boils every fall. Same time i catch bullfrogs.

I do a huge pot of crawfish, and then do frog legs buffalo style.

In the spring i do snapping turtles. Cut in strips like pulled pork in a bbq/clam sauce.

Dead of winter i get squid and white perch and just chop and deep fry. Eat as little chunks.

I never heard of anyone catching and eating them up north. I used to see some fairly big crawfish in the creek at Boy Scout Camp. That creek had some very nice trout, too.
 
I also surf fish year round, my main target is stripers or shark but skates are plentiful. If you've ever eaten a scallop from a restaurant.... 99% chance you ate skate. They punch the wings with a cookie cutter and you can't tell the difference.

I slice them and deep fry them. They taste like fried crab.
 
I spend over 1200 a year on my commercial fishing stuff. Just for me... i also buy licensees for 5 states. I know my seafood.

Live octopus. They cut the beak off and it squirms on the plate. Chewy but delicious dipped in whatever that black asian sauce is. You can feel it grabbing your throat while you eat it. I catch them in blowfish traps all the time.

Blowfish second favorite fish. I have a cleaning station with a nail sticking up, you take them, jam the head on the nail and peel the skin off because its like leather.
 
Squid or octopus? I’ve had squid. I’m thinking that looks more like octopus.

I tied into those at Hu-Hut years ago. Not sure if it was made by Berkley or who... it was like trying to eat rubber. Did not help the visuals.
