Engine Coolant Temp Sensor causing acceleration issues?

A couple days ago, I made a post here asking about the MAF sensor causing my truck to big down in gear and under acceleration when cold and when it's hot, it struggles to keep up with highway traffic. But then I realized that my check engine light would always throw a MAF code, but it's probably been like that before I bought it and it ran fine, but when I put a new ECT sensor on, it kinda stumbled for a day but it was ok. Then I don't drive it for a week and then it runs like absolute crap. Idek where to start at this point
 
If you have code, I'd start by posting that. Maybe having a look in the area of that. So what's the code?

Well, it's the MAF/Baro is out of range code, but apparently I've been driving around with that code for a year and didn't even know until I put a fresh bulb behind the CEL. I'm starting to think it's a fuel issue tho too. Because it was basically empty when I left it in my driveway for a week and then I filled it up completely. I've even took the literal approach and cleaned my MAF and the connector and nothing changed
