I would used 80-90 in a 7.5".

I too only use gasket maker, and would not bother with a paper gasket. RTV can fail and leak after a while, but putting a paper gasket in there will make it leak faster. I use either Ford's TA-29 RTV, or Permatex green Gear Lube RTV. Just depends on what I have at the moment.
