Replacing head gasket on 4 banger, can I leave the exhaust/intake attached?

'87 2.0L 4 cylinder. can I leave the exhaust and intake manifolds bolted to the head, and just remove it all as an assembly?

Can I accurately torque the head with the intake and exhaust bolted to the head? Will this case gasket sealing issues? (the job would be MUCH easier if I can just leave the exhaust and intake bolted to the head.)
 
Ive done it that way without problems and been told by a mechanic its the best way if you can logistically do it by the time you break the bolts on the exhaust and all.
