Does it offer any advantage swapping out the drum brakes in the rear to disc brakes? If it does make any sense is it just a matter of installing hubs, rotors and calipers or am I not seeing something...

go with the explorer axle with the disk brakes on it, then you'll get the heavy 8.8 w/ 31 spline shafs.

If you can lock up your drums stopping you will lock up disc brakes as well. If you can't you need to fix your brakes because you should be able to.
It is more involved than just bolting on factory parts to make a disc brakes fit on a drum brake axle. If you must, an Explorer axle is the way to go.
Here is how to put disks on your axle: http://www.therangerstation.com/Magazine/Fall2003/Converting_your_Ranger_8.8_to_Explorer_disc_brakes .htm
