how do you fill torque converter back up and how much
 
You don't need to. If it's out just pour a quart into it and put it in the tranny. If you drained it through the plug with the converter in the truck, just fill the tranny a few quarts at a time running the truck in between for maybe 20 seconds. The pump will quickly refill the converter.
