Not worried about trying to fit 33's or 35's... wondering more if anyone knows how wide I can go with street tires on a stock or slightly lowered (2" drop) '89. I'll be keeping the tire diameter close to stock size, but I want some wider rubber especially in the back. These will be on 16" 5-spoke pony wheels.

you could run a 275 if you want, its just going to balloon a bit
 
and it'll clear the body of the truck? i dont want to go crazy wide... maybe a 245 or 255
 
yes it should, whats the b.s on those wheels? if youre not looking to go real wide as those 275's i'd suggest the 255's. itll probably look better anyway, like youre not trying to over do it.
