I wanted to get all the fluids changed in my truck and the shop told me that they are the same fluid, is this correct?

No. Clutch fluid is the same as Brake Fluid and is clear. It is not the same as transmission fluid.

The specifications are in your Ford manual and can be purchased at your local automotive store.

You may have misunderstood him.

Ford Manual trans fluid is ATF(automatic trans fluid), which can also be used for the Power steering fluid.

Clutch fluid is hydraulic fluid which is better for heat and compresses less than ATF.
Brake fluid is also hydraulic fluid so clutch and brake fluid are the same.

Dot 3 break fluid ... at least for 2.3
