I'm not aware of a homemade receipe that would be low carb. Even if I could find one, making from scratch is really more effort than I care to invest.

I could cut up the low carb tortilla and bake it, and have done it before, but the results aren't the same. They are regular flour based instead of corn flour, so flavor and texture aren't really worth the effort.

That said, I did find that Old El Paso recently released a low carb hard taco shell. I intend to buy some of those and break up into chips. Maybe that'll be my solution when I've got to have chips and dip to go with.
My wife has a sensitivity to gluten so we make tortillas from yuca flour. It's actually really easy and they're better than we can get in a store. Get a good cast iron or wood press and you're off to the races. Also, cut three sides off a ziploc bag and use that to line the press. The tortillas are easily peeled off and the press stays clean. I'm guessing it would work with the nut flour of your choice.

We cut them up with a pizza cutter and fry them in a skillet to make our own chips.
