In theory, theory and practice are the same. In practice, they are different.
Went to a fairly new barbecue restaurant tonight. Supposed to be Texas style. But I've never been to Texas. So I don't know. It was real good. I sampled the brisket. I ordered pulled pork and a link of sausage they call Texas Hot Gut. It was all delicious. Mac n cheese was creamy and awesome. Green chili corn pudding was good. I'll be going back occasionally.

Just the right size to touch the ground.

In my experience, if it wasn't more than you could eat, it wasn't really Texas Style.

I barely ate it all. You go through the serving line and tell the meat cutter how much you want, such as 1/2# of pulled pork, 1 link of sausage, 1# brisket, etc. Then you pick your sides and drinks, pay and go find a table. The meat is just priced per lb like at a deli or butcher shop.

Irish stew, or at least that’s what we call it. Corned beef, potatoes, carrots, cabbage and this time around some onion. One carton beef broth and enough water to get mostly over the meat. Crock pot for 6 hours with some pickling spices.

Pasta with hot sausage and hot pepper sauce (locally made).
Sausage is from the half pig we buy every year.

Lunchtime. I only ordered 3 chicken tenders because I'm not real hungry. Looks like I have tonight's dinner.

I’m glad I could make your day, 3 years later. Was it worth the wait? I really hope it was.

Had leftover fried stake and sausage gravy from breakfast. Wasn't that much left so I made a pancake too.

Never had leftover fried stake. Was it Locust or Spruce? Maybe Pine?

Does the sausage gravy help with the splinters? ;missingteeth; :stirthepot:
