So what oil does everyone prefer to use in their 5 speed trans? Is cheap ATF good enough? Is the more expensive stuff necessary or is it all hype? How about pennsoil? Syncro?
any thoughts?

It only holds 2.8 quarts bone dry, usually only takes just 2quarts after draining

So not a big expense in fluid
Mercon V or equivalent is spec'ed by Ford, now called Motorcraft XT5QMC

Many like synthetic version, I still used Mercon V

I've seen some issues with Mercon V causing hard shifting in a manual trans... I recommend (specifically): "Dex/Merc" fluid. It matches the original Mercon specification for the M5OD transmission (all before 2008).

If you want a synthetic, Royal Purple Synchromax should be a good bet that is made specifically for manual transmissions that normally take ATF (I have that in my '90 trans, though I can't comment reliably about shift quality since my '90 trans was previously a victim of Mercon V).

I have ran the pennzoil syncromesh fluid myself for several years with no problems, The recommended fluid for this transmission is atf.
