I've noticed that my headliner has begun falling down in multiple places. Would it be practical to just tear it down and have a plain metal roof in its place? Has anyone done this before?

You can but the headliner keeps noise out and insulates so as long as you don't mind a warmer/colder and noisier cab then your good. But why not just redo it? It'll cost under 100. Say 25 to 50 in materials in most cases and you can choose your color and material.
